Equipment

  • 8.5 x 6.5 inch glass baking dish

Ingredients

Peach Filling

  • 2 pounds of frozen peaches
  • 3/4 cup of brown sugar
  • 4 teaspoons of all purpose flour
  • 2 teaspoons of ground cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 pinch of salt

Cobbler Topping

  • 1 1/4 cups of all purpose flour
  • 3/4 cups of white sugar
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of baking powder
  • 1/4 cup of whole milk
  • 1/2 of 1 egg (beaten)
  • 4 tablespoons of unsalted butter (cold)
  • Turbinado/Raw sugar (optional)

Instructions

  • Preheat oven to 375 degrees (F)
  • Prepare peach filling, by adding frozen peaches to a glass baking dish. Add dry ingredients and gentle fold. Leave resting.
  • Next, prepare the cobbler topping. In a large bowl whisk the dry ingredients until no clumps are visible.
  • Then, add the whole milk and beaten egg. Using a spatula or pastry cutter, carefully incorporate the wet ingredients into the dry ingredients until the mixture resemble a wet crumble.
  • Add the cobbler topping on top of the peach filling and then sprinkle cold cubes of unsalted butter. For extra crunch, add some raw sugar/turbinado sugar on top of the butter.
  • Bake for 45-50 minutes and then cool for 15 minutes.
  • Serve with vanilla ice cream.
